    Ingredients required for crispy chicken

    250g boneless chicken, 2 tbsp cornflour, 2 tbsp all-purpose flour, 1 tsp soy sauce, 1/2 tsp black pepper, salt to taste, oil for frying

    2 cups cooked rice, 2 eggs, 1/2 cup spring onions, 1/44 cup carrots, 1/4 cup capsicum, 2 tbsp soy sauce, 1 tbsp dark soy sauce, 1 tbsp vinegar, 1 tsp sesame oil 2–3 garlic cloves, salt and pepper to taste, and 1–2 tbsp oil

    Step 1

    In a bowl, mix chicken pieces with cornflour, all-purpose flour, soy sauce, salt, and pepper.

    Heat oil in a pan and deep-fry the chicken until golden and crispy. Set them aside.

    In a wok, heat a bit of oil and add the beaten eggs and scramble them quickly. Set it aside as well.
