Healthy Spinach Dosa recipe for lunch

Ingredients
2 cups rice, 1/2 cup of urad dal,1/2 cup curd, 2 cup spinach leaves, green chilies, salt to taste, 1 tbsp ginger grated, 1 handful coriander leaves, ghee for cooking as needed, ½ cup grated coconut.

To begin with this easy recipe, wash the rice and urad dal separately and soak them in water for 4-6 hours.

Wash the spinach leaves and keep aside.

Take a pan and add water with a dash of salt, once the water is warm enough, add spinach leaves and blanch them. Grate the coconut.

Now, using a blender make a smooth paste by adding blanched spinach leaves, ginger, green chilies along with some water.

Once this is done, add this to the fermented batter and mix well, let it ferment for an hour. Grate the coconut and make a paste and mix it with the batter and let it rest for sometime. Heat ghee in a pan.

Then pour a ladle full of batter and spread it in a circular motion. Cook by flipping sides.

Serve hot with sambhar and chutney.
