Ingredients required
1 cup gram flour, 1 tbsp semolina, 1 cup water, 1 tbsp oil, 1 tbsp lemon juice, 1 tsp sugar, 1 tsp ginger-green chili paste, ½ tsp turmeric powder, salt to taste, 1 tsp baking soda, 1 tbsp oil, ½ tsp mustard seeds, ½ tsp cumin seeds, 1 tsp sesame seeds, 2 green chilies, a pinch of asafoetida, 1 sprig curry leaves, ½ cup water, and 1 tsp sugar

Step 1
In a mixing bowl, add besan, semolina, turmeric, salt, ginger-chili paste, sugar, lemon juice, and oil.

Gradually add water to make a smooth, lump-free batter.

Just before steaming, add baking soda, and gently fold. Batter will rise and become fluffy.

Grease a steamer plate or thali with oil.

Pour the batter immediately and spread evenly.

Step 6
Steam in a steamer or large pan for 15–20 minutes.

Heat oil in a small pan, add mustard seeds, cumin, sesame, hing, curry leaves, and slit green chilies.

Cut the dhokla into squares and add the tempering on top. Serve fresh.
